Pump-over Sump

Pressing in the GOfermentor requires you separate the pomace (spent skins, seeds, stems) from the fermented wine. We recommend that you pump out from the GOfermentor into a pump-over sump. The strained wine is then pumped into another bag or container for racking and aging. A small amount of pomace will accumulate in the pump-over sump. This is easily removed by hand and discarded periodically. A suitable pump-over sump is the petite pump-over cart (cat# 2038) from GW Kent, http://www.gwkent.com. This is simply a recommendation. We have no commercial or other relationship with GW Kent Inc. Other strainers with similar functionality should work just as well.
